Rub olive oil, garlic & herb seasoning all over the chicken breast. Let stand at room temp while you prep the other stuff. Grill when stuff is about 8-12 minutes from being done to have delicious moist grilled chicken. Flip every 3 – 4 minutes depending on your grill temp.
Mushrooms & Onions:
Slice an onion into onion ring style slices. Put 2-4 tablespoons of button and slices into a covered frying pan. Turn on low heat. Stir occassionally. Will take a long time to cook like this. Watch the temp so the butter doesn’t scorch. Once the onions begin to brown, stir and add a package of sliced mushrooms. (I said Uncle Jonny’s quickness.)
Slice half a dozen baby potatoes into wedges. Put two tablespoons of olive oil in a smallish mixing bowl and stir in wedges. Add seasonings to taste and stir. Used garlic & onion/paprika, italian seasons and basil on these. Stir the hell out of them. Nuke for 5-8 minutes depending on microwave.
Halve spouts and steam until colors brighten up a bit. Remove steamer from pan and put sprouts back in with a tablespoon or so of olive oil. Over medium high heat, stir in one or so tablespoons of balsamic vinegar for a few minutes.
Put chicken on plate. Smother with mushroom/onions. Serve up the rest. Get some dry white wine and chow down. Tell your dogs to shut the hell up because they aren’t supposed to eat onions or garlic; their breath is bad enough as it is.
